I made Gazpacho for the first time today! It is good! It is in the refrigerator chilling right now, and we will have it for dinner tonight. Here’s the recipe.
4 servings (about 1 cup each)
1 can (28 oz) diced tomatoes, undrained
1 diced red or orange bell pepper
1 medium unpeeled cucumber diced
2 green onions, finely chopped
1/4 cup chopped red onion or sprinkle some dried chopped onion
1 bunch cilantro leaves chopped
3 Tbsp apple cider vinegar
3 Tbsp extra-virgin olive oil
A couple dashes of hot pepper sauce or sprinkle ground cayenne. (To taste)
2 garlic cloves, minced
Place all ingredients in a large bowl and combine. Chop 1/2 to 3/4 of the mixture in a food processor or blender and return it to the bowl. Mix well. Season with salt and pepper if desired. Refrigerate 2 to 8 hours before serving.
